rikibethThe marinade imparted excellent flavor, and the rich sauce deserved the praise Jack gave it, but I can see why Stephen dismissed it as a "melancholy meat" and likely to produce apoplexy.
Next time, no questrion about it, we blanch it, to render the fat as much as to loosen the quills.
