No, I'm not strictly vegetarian, I'm just allergic to fish. But I love vegan and vegetarian foods.

I was going to suggest kasha varnishkes for the whole grain buckwheat groats, but then I remembered that the main reason I like kasha varnishkes is to soak up all the good cooking gravy from beef brisket. I suppose if you made it with caramelized onions it would have some of the same savory goodness without the meat.

The pate a choux is not hard if you have a stand mixer so you don't throw out your shoulder. The pastry cream is trickier but I would be happy to work with you on it.
Got a good heavy bottomed saucepan and an instant read thermometer?
