The thermostat is beyond busted.

I think I managed to salvage the swan bodies, but I am going to have to make up another batch of pate a choux for the heads, because they are burnt to a crisp.

Blah.

The swan bodies were teardrop-shaped blobs of eclair dough. The heads were piped squiggles. You slice the teardrop in half horizontally, then slice the top half lengthwise. Put a scoop of ice cream on the bottom, stick the halves on the sides of the scoop for wings, and stick the head squiggle on the front of the ice cream. Voila, swan profiterole.

These were the refreshments for Charlotte's birthday party.

I usually put some kind of mousse in them when I make them but I'll have to try the ice cream thing.

The classic presentation, according to my textbook, is Creme Diplomat, which is pastry cream with whipped cream folded in -- but I had plenty of vanilla ice cream on hand, and very little inclination to fool around making Creme Diplomat when I didn't have to. These were girls age six to ten, after all -- ice cream was just fine.

I froze the scoops of ice cream on a baking sheet ahead of time to simplify assembly. Then I melted the ganache frosting that was left over from her cupcakes on Tuesday, and that was the chocolate sauce. Served on best china plates, choice of regular or peppermint tea, and crystal goblets for milk or juice. :)
