Why I love Nick: He showed me a way to do the horrible icky pain in the tuchis fried mozzarella appetizers in BATCHES, so they don't take a million years.

Why I hate Nick: He was the first one to come down with this cold and spread it all around work. Now I am sneezing and I have a sore throat and my sinuses are all full and I have LOVELY muscle fatigue.

At least because I wasn't the first one to get it, Derek understood when I said I had it and didn't fuss at me for being slow.

Should I just stop thinking right now about the implications of that second thing regarding commercial kitchen hygiene standards?

We wash our hands a lot, and use gloves. I sneeze into my shoulder, when I can't avoid it. And the cooked food ought to all be fine. I'd only worry if someone sneezed on the salads.

People who work in food service rarely get paid time off. If rikibeth doesn't come in and work, she doesn't get paid, and she and her kid have trouble eating and making rent. It would be ill done of us to place blame for this on the people in this with the least power to affect change. Blame instead the system which values profit above all else and allows employers to exploit their workers beyond even what the law permits.

It could be worse. This place is actually offering a limited health insurance plan at a rate I can afford. I'll have dental coverage for the first time in YEARS.

It read to me as though you were at least implying rikibeth was making her customers sick by choosing* to work instead of not getting paid. Or did you have something else in mind when you wrote of hygiene? But in either case, you're entirely welcome.

I appreciate you rushing in to defend me, but it's cool. dpolicar and I have known each other for 22 years.

Honestly, I'm a little bit curious as to how it's affecting our food if all the cooks can infect each other so quickly with a cold. And I don't even go on smoke breaks with the rest of them!

Ah. My apologies to you both, then. I grew up in a family where the adults around me were constantly and explicitly blaming systemic problems on the people with the least amount of power in those systems and it has left me perhaps a little raw when I see it come up these days.

What I had in mind was that Nick was spreading pathogens all around their kitchen, and this was not considered exceptional, and that if I let myself think too much about the implications of that it will likely turn me off to eating in commercial establishments altogether.

It reads to me as though the whole topic of blaming rikibeth, blaming the system, blaming their exploitative employer, or blaming anyone at all is your contribution to the discourse rather than mine.
