It really makes a difference not to have to do every. damn. salad. new on Monday.

Muffins -- blueberry and strawberry banana. Scones -- I goofed, yesterday. From something Jen said, I thought we only had raisin in the house, so I baked off the required numbers in raisin, didn't look at the other tray, and backed up a tray of cinnamon. This morning, I got in and whoops, both trays were cinnamon. *shrug* So I mixed up a batch of raisin, and we had our usual two varieties. Didn't set me back much. Brioche and sticky buns -- I'd backed up a batch of dough yesterday, too, but the old batch covered the numbers. I'd thought it might, but I knew I wouldn't want to replenish it today anyway, so that was one less thing I had to do. Go me.

Roasted off eggplant in one oven and bacon in the other and had the ovens off by 9:15 AM.

The garden salads that I'd made on Saturday actually sold a few, which was better than the Cobb salad did. Go me again. So I made three more for the case.

Panzanella -- out. Chickpea -- out. I thought we should toss the little bit left of white bean and artichoke, but boss said put it out. Fine, whatever. Edamame, cucumber, couscous primavera, southwest chicken all good; made new coleslaw, new egg salad, and a batch of zucchini feta.

Sandwiches. Veggie wraps, selling steadily, so six more. Southwest chicken wraps, all part of the plan -- it's why I made a large batch of the southwest chicken salad Saturday. Reminded the boss that the customers for veggie wraps were usually our vegetarian base, so yes we did need another special sandwich. Pointed out that when we did scallion-artichoke spread with ham instead of turkey, they still sold well, and that would actually move the ham out the door, which otherwise sells verrrrry slowly, and I had some artichoke-scallion puree ready to go. Did not mention that it was part of my Cunning Plan not to have to slice turkey today, but it was. And I didn't have to. Go me.

Weird weather today -- mid-70s and cloudy, and if it were really raining I'd have agitated for hot soup, but it was just humid and sticky, so classic gazpacho that I'd made earlier. I discussed having a Second Cold Soup with the boss, and she gave me the go-ahead to make vichyssoise for tomorrow. Cold soup is great, but we can't ALWAYS have the same damn one.

I had all the lunch stuff out before noon, AND the order away. I actually got to sit and eat my lunch in peace. Since I was going to have a bit of extra time while I was cooking the soup, and because I really wanted to use up the last of the broccoli, I preheated the small oven and set up three broccoli, cheddar, and onion quiches. Bye-bye, broccoli.

While they were baking and the soup was cooking, I sliced and portioned some more ham. This is less annoying than turkey purely because we don't slice as much at a time. See "slow seller."

Carlos did the tuna and chicken salads.

I didn't get yelled at for ANYTHING. I got my ideas OKAYED. And I was so on top of things that I could do EXTRAS, like the quiches.

Tomorrow's my day off. Wednesday, I think I'm gonna ask for my raise.
