So, tonight I tried this recipe, which I found on [livejournal.com profile] madpiratebippy's journal. I had a package of 9 large portobellos, about half a pound of feta cheese, and I used a handful of cherry tomatoes and two large stems of basil. I broke up the feta with a fork in a bowl and stirred in the chopped tomatoes and basil. I don't keep my olive oil in a spray bottle, so I poured some into a measuring cup and brushed it on the caps with a pastry brush. Also, I am the only one in my house who likes artichoke hearts, so I topped three like that, three with caramelized onions (wow is it handy to have those in the fridge) and left three plain.

They were all very, very good, although next time I'm going to try sundried tomatoes instead of fresh.

SInce that wasn't really enough for dinner, I sauteed some plain chicken breasts, and made a quick pan sauce with garlic, chopped parsley, lemon juice, and a pat of butter.

A bit of low-carb spaghetti on the side, and baby spinach salad to be the green vegetable, and it was a happy dinner.

Which I needed, because a bit of a cash flow problem means I won't be going to Haven tonight. Or Bishop's on Thursday. So I'll be around on IM, if anyone wants to chat.

[livejournal.com profile] bunnygoth, you may certainly have a raincheck on dinner and clubbing. Do these stuffed mushrooms sound good to you? I can most certainly make enough for an entree.

Mmm, those stuffed mushrooms sound VERY delicious. I love mushrooms. And I like artichoke hearts too, by the way!

I'm sorry you couldn't make it to Haven tonight either. I'm so tired I can barely keep my head up, but I can't seem to sleep either. Silly body.

Yeah, sun dried tomatoes would work better for that. I think next time I'm also going to try a bit of roasted pepper. I think the best way to have them with the mushrooms, though, is a Cold Mountain salad- thin sliced, with fresh cracked pepper and salt on it, drizzled with balsamic vinegar (not the real stuff, the stuff at the supermarkets).

Mmm. Going to have to do that sometime soon.

I'm really glad that you liked my mushroom recipie though! It makes me feel like I really can cook!
