I share your difficulty - only one of me in the house drinking coffee. But keep not one but two coffeemakers on hand. I do use a coffeemaker when my parents come into town, which happens at least twice a year.
Since my rule of thumb is that any device that gets used at least twice a year gets kept, I continue to allocate cupboard space for it.
The toaster we got as a wedding gift, on the other hand, will be leaving our kitchen soon. The bread I like doesn't fit in it, so I continue to make my toast with the gimpy toaster oven that Granddaddy bought back in 1985.
