Mind you, although I made it with the house vegetarian in mind, she decided she didn't like it.

You see, I had a limited time to come up with a dinner thing, because I had to pick [livejournal.com profile] melovechocolate up from school at 3, and get her to her 4:30 tae kwon do class, so dinner prep had to happen between those two times. So it ideally had to be something that could crockpot or otherwise cook unattended.

What I thought of was the rice cooker.

So I diced three onions and some celery, and sautéed them in olive oil with a little of a tarragon-based herb mixture, and scooped out the seeds and cubed up the flesh of half a red kuri squash that I'd used up the other half of last night, in Moosewood's Gypsy Soup recipe (we were supposed to carve them like pumpkins but I was TIRED), and tossed them in to soften a little, and then put 3 cups of arborio rice into the cooker, stirred in the vegetables, added 8 cups of water and 1/2 cup of sherry, closed the lid, and pressed the button.

I've got a bowl now, with more salt and pepper, and sprinkled with cheddar cheese. It is YUMMY.

The vegetarian kiddo ate a Chinese vegetarian bao.

*sigh* At least she really likes Gypsy Soup.

God, that sounds wonderful!

I am sittig here now with black bean soup ( made a few weeks ago, then put into the freezer) topped with cheddar and avocado. Yummy!

Too bad for her. It sounds good!

Monday we finished off the last of a batch of bean soup with parsnips, carrots, and a bit of ham in it. Seasoned with homemade garam masala.
