hours picking up

I also suspect they're trying to make the ordering track more closely to the usage. Which, this week, meant a shortage of breadcrumbs. I had to pulverize croutons to make the meatballs.

My pastry training reasserted itself today. I couldn't cope with watching everyone use a rubber spatula or a freaking tablespoon to spread the ganache on the desserts, especially when there's a perfectly good icing spatula in the house, and I've got a baby offset in my car. So I said, "Tom, want an offset?" when he was doing the B Cups (quasi Hostess Cupcakes, two chocolate cake layers with white mousse filling coated in ganache) and he said, "eh, I'm almost done, but if you want to do the Funny Bones and make them prettier, be my guest." So I grabbed the big icing spatula and went to town. They're actually smooth and have something resembling corners. Next time I'm going to ask if I can do the filling, too, so the edges are more even and I don't have to fill in gaps and overhangs with ganache.

I'm glad about the extra hours. I need all the hours I can get.

Oh my goodness, but I do believe that "I had to pulverize croutons to make the meatballs" is my new favorite 'this-sounds-like-the-best-non-sequitur-ever' quote. I feel like it should be a euphemism for something -- something AMAZING.

And I'm going to wish I had some of that pastry training in a few days when I have to make all the cupcakes for Elly's birthday party (she wants animals -jaguar- cupcakes...)

Here is a tip: get your reference pic of a jaguar, preferably with a nice clear silhouette outline. Print it out scaled to fit on a cupcake top. Lay down a thin base coat of frosting, take a skewer, and poke little holes through the paper into the frosting around the outline. This way you'll have guidelines. Do not attempt to freehand a jaguar. It can only end in tears.

These are our past cakes (missing the little red horse I did for Isaac's first) but she wants cupcakes, not a cake cake. I think I might use mini cupcakes for the heads and if I can find white 'circus peanut' candies, I can make zebras. Not sure what else I'll do.

What? Meatballs aren't 100% meat. They also include breadcrumbs, for flavor and binding. Croutons are seasoned toasted bread, and thus easy to turn into the sort of nice dry Italian breadcrumbs one uses in a meatball recipe. It makes perfect sense to me!

If I thought Jayne cooked, I'd totally see him using that as a euphemism for something.
